(Just another week night meal around here...)
Before you go thinking we throw $15 salmon on tostadas like it's nothing... That salmon right there is rescued salmon... aka dumpster salmon aka Trader Joe's was throwing it out and we got it instead aka it was perfectly fine salmon it's just that the "sell by" date happened to be that day.
We don't do much dumpster diving these days but we get to benefit from other peoples efforts!
A while ago I mentioned that a friend of mine made a documentary called DIVE! It's about dumpster diving, but not in the way you might think ... it doesn't show how cool dumpster diving is, it doesn't try to get everyone to dumpster dive, the point of the documentary is to show HOW MUCH FOOD is thrown away every day... back up... how much PERFECTLY EDIBLE food is thrown away, while people are going hungry. It's truly a great film and I am not saying that just because all of my closet friends are in it... :) .. really...
Since the last time I mentioned the film it has gone on to win many, many film festival awards AND it just got distributed! It will be released on DVD July 19th and will be available on Netflix so be sure to add it to your queues!
On top of that, the soundtrack was released this week. And I am not saying this because everyone in the band also happens to be our best friends (same people who are IN the movie), but seriously their music is incredible. I listened to their music before we were even friends! So, I highly encourage you to check it out, it's a little rockish, a little folky, and little gospely... I think you'll like it. Nay, LOVE IT.
One more thing, Jeremy (creator of DIVE!) has started a petition on Change.org to get Trader Joe's (and hopefully other stores) to change their food waste policies... There are over 70,000 signatures so far! See the link on the right hand side bar of my blog to sign. Please sign!
Back to the tostadas. Honestly, this is something we just threw together. One of those things you don't plan for but it turns out amazing. I don't have a recipe to share, because there is none... I can explain it in pieces though:
We toasted some corn tortillas in the toaster oven (or you could buy tostada shells) and I spread some re-fried black beans on top. (Notice, I only had enough left over beans from the previous night to cover 2 of the 4 tostadas! Really, this was a "what we had on hand meal.")
I cooked that salmon on the stove till nice and crispy flaky on each side.
Cumin Carrot Slaw
Cabbage, shredded carrots, a diced jalapeno, dash of cumin, lime juice, little of of chopped red onions, salt.
Pico de gallo
Chopped tomatoes, dice red onions (soaked in just a tad of rice vinegar for a couple of mins), diced jalapeno, chopped cilantro, lime juice.
Guacamole
Smashed avocado, greek yogurt, lime juice, diced jalapeno, chopped cilantro.
Assemble and viola! This is Justin trying to be so patient while I take a quick photo... And yes, he has my name tattooed on his chest!
Lastly, this is JW's version - fit for 10 month old. Black beans, yogurt, avocado and bits of salmon.

Tried finding email address to reply to your comment, but to no avail :) So this will have to do. Love hearing that you resonated with so many of those. I was typing it thinking, "This sounds kind of ridiculous...I wonder if anyone will relate..." and what do you know: FNL and black stretchy yoga pants bring women of all kinds together :) Mine are from Target...they're reversible. And I love them.
I'm sure each store is different, but my (yes, I work there part time) TJ's donates about 95% of their food to the local shelter. We only have throw away what is completely moldy, as its a liability to give away. I agree with you on a whole, WAY too much food gets wasted, but I high five the ppl who are trying to make changes.
I can't wait to watch the documentary and listen to the soundtrack OH and try these yummy tostadas!! MMM!

Sara: yea! Some stores donate and that's great... Other stores have taken on a zero waste policy (albersons and I think walmart too!) and the hope is that great companies like tj's and wholefoods would do the same! Corporately.. (I'd think it would be right their ally ya know?!?)

these look amazing...i'm definitely going to check out that doc...i researched some dumpster divers a while back for a tv show...it was amazing...so staggering how much food is wasted...

I saw Dive last year at a screening at Colorado College, and it was eye-opening. Glad to hear it's being distributed, I'd like to see it again.
