On to ice cream... I love our ice cream maker.
Peanut butter and chocolate are a force to be reckoned with.
Peanut Butter Ice Cream
(with coconut milk)
- 1 15 oz can of lite coconut milk (you can use regular coconut milk, I prefer the lighter texture)
- 1/3 cup agave
- 1/3 cup peanut butter (chunky or smooth)
- 1 teaspoon vanilla
- Mix all the ingredients in a bowl until well combined. This can take a bit if you're peanut butter is thick.
- Once mixed together well, add to your ice cream maker and follow it's usual instructions.
- When done pour the ice cream into a container and freeze for another hour or two. Scoop to serve!
Chocolate "magic shell" sauce
(with coconut oil)
- 2 tablespoons coconut oil
- 1 tablespoon dark chocolate chips
- 2 teaspoons unsweetened chocolate powder
- 1 tablespoon agave
- Melt the coconut oil in a small pot on the stove over a low flame.
- Once it's melted turn off the heat then add the chocolate chips and stir until melted.
- Add the other ingredients and stir until combined.
- Let it cool for 15 mins or so because serving.

I think as long as the options are delicious, and he can see they're made with love, he'll start to associate them with home and those packaged goodies won't be able to compete!
I love my ice cream maker too. I'm so making this! I don't have any little one food tips, but I know when the time comes I'll be feeling the same way. Although I don't think any child would refuse ice cream!
SO, I made the Chipotle beans and my husband and I went to our fridge and realized we had no more leftovers.... the recipe was kick !@#. THANK YOU! And, I will be making that ice cream too. MMMMM! XO!

I think the key is that no food should be forbidden, making it tempting and an act of rebellion. You might not take him to McD's, but if his friend's mom buys him a Happy Meal, no biggie. At home he will get non-processed foods cooked with love, but he won't ever feel deprived because there aren't restritions. My 5 year old goddaughter has never seen a Kraft Single in her house, but she will eat the stinkiest goat cheese with delight. And at the neighbors? Grilled cheese at its most plastic. She prefers the goat cheese, but I think the fact that her folks don't place restrictions will help her in the long run.
oh my goodness this looks absolutely delicious! i have been craving ice cream SO bad lately... but with it being -21 and frozen hands... i don't think it's that great of an idea, but i'm glad someone else is livin it up! :)

Stacey Ballis -- that is great advice! I love it! I think I will do my best to not forbid food... well, maybe I won't forbid but I will have to try really hard to hide any disgust or frustration if he ends up getting food that I think is terrible! :)

Yeah, we have the same questions about our little Nelle. Who circumvented Mum and Dad and asked Santa for chocolate for Xmas! Luckily, Santa delivered a lovely raw dark chocolate bar. Which she devoured. Heh, heh.
