Carrot Salad




I am not one for salads... I wish I liked them more, but I find them boring.
This carrot salad is not boring though! No boring ice burg lettuce leaves. No need for thick gobs of dressing to make up for the lack of flavor.

I got this recipe from my friend Heidi - she's pretty amazing. She has influenced my diet and cooking a lot. Here's to you Heidi!

Carrot Salad
  • 6 medium sized carrots, grated
  • juice of 1-2 lemons
  • half a jalapeño minced
  • handful of cilantro chopped.
Mix together and salt to taste.

mmm, i make this too! trying adding some thinly sliced red bell pepper. it is SO good!

added lime sans jalepeno (didn't have any). DELICIOUS!

yes it's a typical chilean salad. they have the greatest salads!

as for my favorite peruvian dish..... it's hard to say.. but I looove Choclo con Queso. The peruvian corn (with the huge kernels) and Andian Cheese.mmmm
