Love These

New snack obsession:





1 cup creamy peanut butter
1/3 cup unsweetened coconut flakes
1/3 cup almond meal
1/2 cup honey or agave

optional: unsweetened cocoa to roll it in.

Mix all the ingredients together as best you can in a bowl then roll out into small balls. Then roll in unsweetened cocoa, if wanted. Eat right away, or if you can wait, refrigerate them for an hour or so, they are better that way.

sound really yummy... (as i am a peanut butter lover).. just one question, to make these with honey... what kind of honey? the processed runny kind? I assume so, because the raw stuff would probably be too thick. Also is almond meal, almond flour? If so, i could just stone ground some almonds.. right? I am tempted to try this but wanted to check with you first. thanks love!

hey Tracie!

Yeah! Not the thick honey. We use a raw honey and its runny... not sure what the difference between that and the thicker opaque honey... Agave works nicely too, but you probably can't get that there, right?

And almond meal, almond flour, yeah! You can make it yourself... or you can replace that with something else flour like. The original recipe called for Malt powder, but I didn't have that.
