Maybe my taste buds are changed, but I think I like this MORE than a traditional pudding. It's rich and creamy and chocolatey and decadent and wonderful and so easy to make ... sold?
Chocolate Pudding Pie in a Jar
makes enough for 2
Crust
1/2 cup pecans
1-2 dates
1 tablespoon cacao nibs (optional)
1 tablespoon coconut flakes (optional)
1 tablespoon coconut flakes (optional)
a tiny bit of salt
Pulse in food processor until well mixed. Then divide between the two jars, press down at the bottom of the jar.
Pudding
adapted from here
2 bananas (don't use soft, blackened bananas)
4-5 tablespoons of unsweetened cacao powder
2-3 tablespoons of almond butter (or any other nut butter would work)
if needed to get things moving in your blender add a little bit of liquid: soy milk, almond milk, regular milk... whatever you have
Blend together until smooth. Pour (or scoop) into the jar and chill for about an hour before serving.

This sounds amazing! I will have to try it. Have you ever made chocolate avocado mousse? It's really good, it's a little thicker, but I bet if you thinned it a little with some liquid it would smooth it out more like pudding.
I've been making a variation on this recipe for some time since I saw it. So easy and incredibly delicious. Never forget the cocoa nibs, but I sometimes add vanilla or maple syrup. Thanks for the post!
