Oregon is wonderful! Where are you guys headed? I feel you would love the coast, especially with the camping you do.

How did they turn out? I've made coconut muffins before, but nothing else. Would love to have a go-to gluten-free recipe for some of my friends.

Coconut flour is intriguing. What's the flavor like?

Hi Hannah! The flavor isn't very coconutty - to me at least. If you over cook it can be dense and dry, but if cooked just right it is light and moist. And maybe its the fiber and protein in the coconut flour but a little goes a long way with these... I get full from a tiny cupcake!
