One of the best things about having a baby is all the food you get from friends and family - the way to my heart! It's been one of our considerations for having another one. We just sat back, hung out with baby and the food came to us, it was magical. A friend made us a curry couscous dish that I've been meaning to recreate... and this is close enough. It's a different, but it turned out great! (It's also inspired by this quinoa salad) Oh, and in case you make this salad and are distracted by baby needs, it's really good at room temperature, it can wait for you.
Curry Quinoa Salad
1 1/2 cups cooked quinoa* then add some curry powder, dash of cumin, cinnamon, turmeric, and salt
1/8 cup golden raisins
1/8 cup toasted cashews
2 diced green onions
2 tablespoons fresh chopped cilantro
1 zucchini diced and sauteed
1/2 avocado diced
This is more of a recommendation than a recipe, use what you have/want.
* FYI: I've had great success making quinoa in a rice cooker!

These are all favorite ingredients in our home, often found playing together at meals. The addition of avocado will be a new one I look forward to trying. A post with such trusting eyes staring back has to be a good one!

Amanda, you might dig this one, too. It's a Deborah Madison recipe: curry quinoa salad with tons of chopped mango and cilantro...I started quadrupling the recipe every time I made it because we'd gobble it up so fast. The sour Greek yogurt, the flavor of the curry, the bite of cilantro and mellow creamy tartness of the mango just about brings tears to my eyes its SO. DAMN. GOOD.
