Banana Nut Muffins

Banana nut muffins

I'm way too excited to bake again. The oven doesn't get turned on much during the summer here and I have a whole list of things I want to bake for the fall. But, of course, I am going through one of my no-gluten phases again. Every once in a while I'll decide that I don't want to eat it for whatever reason. So, in this recipe I used this in place of the wheat flour and it turned out great.

Banana Nut Muffins
(gluten-free option)

2 ripe bananas, mashed
1/2 cup agave
3/4 cup Greek yogurt
1/4 cup coconut oil (or applesauce - haven't tried it, but hear it will work)
1 ts vanilla

2 cups whole wheat pastry flour (or the mix I mention above, I've made both versions and both are great!)
1 ts baking soda
1 ts baking powder
1/2 ts salt
1/2 cup pecan pieces
optional dark chocolate chips

Combine wet ingredients in a bowl, mix well. In another bowl sift dry ingredients then gently mix in wet ingredients. Spoon batter into baking cups - 3/4 full. Bake at 350 for about 25 minutes (I have small baking cups, adjust for your size).


p.s. muffins in mason jars, it's going to take over the world.

Was this a "baking with baby" or "baking while baby (hopefully) sleeps" experience? Must be difficult to juggle! These sound and look great. I've used applesauce my times in baking, always wonderful results. One last thing -- love how you store the muffins!
