These are good. I mean real good-really rich and nutty. Sure, they're full of (good) fat, but they are good for ya, I say.
Nutty Chocolate Coconut Cookies
Preheat oven to 350 degrees.
Combine in a bowl:
1/2 cup almond butter
1/4 cup Sucanat or natural brown sugar
1/4 cup honey
3 tablespoons coconut oil
1 cup unsweetened shredded coconut
1/2 cup chopped raw walnuts (or pecans!)
dash of sea salt
1/2 cup mashed dark chocolate chips
Mix all of that together, then mix in 1/2 cup coconut flour (I used almond meal, turned out great, just falls apart easy!).
Form the dough into one inch balls. Place them on a baking sheet lined with parchment paper. Bake for 15 minutes, or until tops are golden brown.

Mmm, these make me feel dreamy...am rustling around in the cupboards now, hunting for chocolate, foraging through baggies to ferret out some coconut. A sudden baking attack...
